A refreshing, easy pasta salad with the fresh flavors of lemon and basil. Ingredients:
most of a 1 pound package of pasta, i used mini-bowties |
1 large clove garlic |
2-3 t kosher salt, divided |
juice of 1 lemon |
1/3 - 1/2 cup good olive oil |
8-15 fresh basil leaves (to your taste), chiffonade |
3t capers (good substitute: kalamata olives) |
1/2 cucumber, peeled if waxed and chopped |
2 medium or 1 large tomato |
2 green onions, chopped fine |
freshly ground pepper to taste |
optional: quartered, marinated artichoke hearts |
for a main dish pasta salad, toss in some sliced, grilled chicken breast |
Directions:
1. Cook the pasta in plenty of boiled, salted water until just al dente.(Using part of the 2-3t of salt) 2. Sprinkle additional salt on the garlic & chop it fine (the salt will help the knife chop up the garlic) 3. In a large salad bowl, combine the garlic, lemon juice, olive oil and basil. 4. Toss the hot pasta into the lemon dressing, toss to coat 5. Add the remaining ingredients, toss. 6. Taste, adjust seasoning as necessary. 7. Serve and enjoy! |
