Lemon Basil Chicken Salad |

I adapted this from a recipe from Paula Deen's magazine. Ingredients:
1 lb chicken breast |
1 -2 celery rib |
2 tablespoons fresh basil |
2 tablespoons fresh lemon juice |
1/2 cup light sour cream |
1/2 cup reduced-fat mayonnaise |
1 teaspoon salt |
black pepper |
Directions:
1. Poach chicken breasts and cool. Finely chop chicken, celery, and basil. Add mayo, sour cream and seasonings. Mix and cool. |
