crust |
1/2 c butter |
1 c flour |
1/4 c powdered sugar |
filling |
2 – 3 tbs lemon juice |
zest from 1 lemon |
1 c sugar |
2 tbs flour |
1/2 tsp baking powder |
2 eggs, well beaten, fluffy |
Directions:
1. Cut butter into flour and sugar until mixture is coarse meal texture. Pat in bottom of 9x13 pan. Bake at 350 degrees for 15 minutes. 2. Mix juice, rind, sugar, flour, and baking powder. Fold in eggs. Pour over baked crust and bake 25 minutes. Cut while warm. Generously dust with powdered sugar. |
