A great recipe thats definately addictive Ingredients:
1/2 cup confectioners' sugar |
1 1/2 cups flour |
1/2 teaspoon salt |
3/4 cup butter, cut in small pieces |
4 eggs |
1 1/2 cups granulated sugar |
1 grated lemon, rind of |
1/2 cup fresh lemon juice |
3/4 cup whipping cream |
confectioners' sugar, for dusting |
Directions:
1. Preheat oven to 325F. 2. Grease a 13x9-inch baking pan. 3. Sift the sugar, flour, and salt into a bowl. 4. With a pastry blender, cut in the butter until mixture resembles coarse crumbs. 5. Press the mixture into the bottom of the prepared pan. 6. Bake until golden brown, about 20 minutes. 7. Meanwhile, for the topping, whisk the eggs and sugar together until blended. 8. Add the lemon rind and juice and mix well. 9. lightly whip the cream and fold into the egg mixture. 10. Pour over warm crust, return to the oven, and bake until set, about 40 minutes. 11. Cool COMPLETELY before cutting into bars. 12. Dust with confectioners sugar. |
