Another great recipe from the Bisquick cookbook. I love these. Ingredients:
1 cup bisquick |
2 tablespoons powdered sugar |
2 tablespoons firm butter |
3/4 cup sugar |
2 eggs |
1 tablespoon bisquick |
2 teaspoons grated lemon peel |
2 tablespoons lemon juice |
Directions:
1. Heat oven to 350 degrees. 2. Mix 1` cup Bisquick and the powdered sugar in small bowl. Cut in butter, using pastry blender. Press mixture in bottom and 1/2 inche up edges of ungreased square pan, 8 x 8 x 2 inches. 3. Bake 10 minutes or until light brown. 4. Mix remaining ingredients , pour over baked layer. 5. Bake 25 minutes or until set and golden brown. 6. Cool completely, about 1 hour. 7. If wanted you could make a glaze and spread on top while warm. |
