Thesse are a wonder and refreshing bar. Ingredients:
1 cup all-purpose flour |
1/2 cup brown sugar, packed |
1 cup quick-cooking oats |
3/4 cup butter or 3/4 cup margarine |
1 cup chopped nuts |
1 package cream cheese, softened |
2 eggs |
1/4 cup lemon juice |
1 tablespoon grated fresh lemon rind |
1 cup coconut, angel flake |
1/2 cup icing sugar |
1 tablespoon milk |
Directions:
1. Heat oven to 350ºF. 2. For bars, mix flour, sugar and oats; cut in butter. 3. until mixture resembles coarse crumbs. 4. Stir in nuts. 5. Reserve 1 cup of the crumb mixture. 6. Press remaining crumb mixture onto bottom of greased. 7. 13X9-inch baking pan. 8. Bake 15 minutes. 9. Beat cream cheese, eggs, juice and rind in bowl with electric mixer on medium speed until well blended. 10. Stir. 11. in coconut. 12. Pour over crust; sprinkle with reserved crumb mixture. 13. Bake 25 minutes, cool, then cut into bars. 14. Glaze by blending together the icing sugar and milk. 15. Using a teaspoon,. 16. drizzle glaze over each bar. |
