I was leery of this recipe when I found it in a magazine. But I decided to try it anyway, and was I ever glad! This is absolutely superb. I thought it would be too lemony, but it wasn't. And so moist. A great recipe for a crowd. Ingredients:
2/3 cup lemon juice |
1/3 cup cider vinegar |
1/3 cup oil |
1 tablespoon soy sauce |
2 teaspoons sugar |
1 teaspoon salt |
1 teaspoon paprika |
1 teaspoon chili powder |
1/2 teaspoon garlic powder |
1/2 teaspoon pepper |
1 medium onion, finely chopped |
3 1/2-4 lbs cut-up chicken |
Directions:
1. Mix all ingredients, except chicken, to make marinade. Set aside 1/4 cup for basting. 2. Put chicken & marinade in resealable bag. Refrigerate overnight. Turn in the morning. 3. When coals are ready (medium heat), grill the chicken, covered for 45 minutes or until done. Turn and baste every 10 minutes. |
