I whipped together this wonderful pesto one night when the family came over, and they loved it so much I ended up giving it as Christmas gifts later that year! It's super easy and incredibly delicious. Great on homemade crostini! Read more ! Ingredients:
12 oz. jar marinated artichoke hearts, oil reserved |
1/3 – 1/2 cup freshly grated parmesan cheese |
1/3 – 1/2 cup walnuts |
zest of 1/4 lemon |
juice of one lemon |
fresh parsley, if desired |
Directions:
1. Blend artichoke hearts, parmesan cheese, walnuts, lemon zest, and lemon juice together in a food processor. 2. Add reserved artichoke oil til you reach the desired consistency. Add parsley, if desired. 3. Garnish with a sliver of lemon and a walnut or so! |
