This recipe is from the Simply Delicious Desserts Cookbook.... Ive made this several times and it turns out perfect every time... Makes a pretty pie.. Ingredients:
meringue crust (recipe follows ) |
1 can sweetened condensed milk (14 ounce) |
1/3 cup lemon juice |
2 teaspoons grated lemon zest |
3 egg whites |
1/4 teaspoon cream of tartar |
1 cup whipping cream, whipped |
yellow food color optional |
Directions:
1. Meringue Crust: 2. Preheat oven to 275 degrees. 3. In a small mixer bowl, beat 3 egg whites, 1/2 teaspoon vanilla and 1/4 teaspoon cream of tartar until soft peaks form. 4. Gradually add 1/2 cup sugar, beating until stiff but not dry. 5. Spread on bottom and up sides of well buttered 9 inch pie plate to form crust. 6. Bake for 1 hour then turn oven off and leave crust in oven for an additional hour. 7. Cool to room temp. 8. Pie: 9. In a large bowl, combine sweetened milk, lemon juice, zest and food coloring; mix well. 10. In a small bowl. beat egg whites with cream of tartar until stiff but not dry; gently fold in milk mixture. 11. Fold in whipped cream. 12. Pour into prepared crust and chill for 3 hours or until set. |
