this is a recipe from a cookbook call Chicken... I love lemon chicken... and this is a quick and easy recipe Ingredients:
4 chicken breasts, boneless, skinless |
1 egg white |
2 tbsp. sesame seeds... i like the unhulled but hulled works fine |
2 tbsp. vegetable oil |
1 onion, sliced |
1 tbsp. brown sugar |
1 lemon, fine grate lemon peel and juice |
3 tbsp. lemon curd |
1 ( 7-ounce ) can sliced water chestnuts |
Directions:
1. place the chicken breasts between 2 sheets of plastic wrap and pound with a rolling pin to flatten 2. slice the chicken into thin strips 3. whisk egg white until light and foamy 4. dip chicken strips into egg white 5. then coat with sesame seeds 6. heat oil in a wok and stir fry the onion for 2 minutes until softened 7. add chicken and stir fry for 5 minutes or until the chicken is golden 8. mix sugar, lemon peel, lemon juice and lemon curd 9. add lemon mixture to wok and allow to bubble slightly 10. add water chestnuts and cook 2 minutes... 11. serve with rice |
