Lemon and Parsley Butter Beans |

A high fiber storecupboard side dish. Ingredients:
1 tablespoon olive oil |
1 large onion, sliced |
1 garlic clove, crushed |
2 (14 ounce) cans butter beans, rinsed and drained |
1 lemon, zest and juice |
1 ounce parsley, chopped |
Directions:
1. Heat the oil in a pan, add the onion and cook for 10-15 mins until soft. Add the garlic for the final minute, then stir in the beans to heat through. 2. Add the lemon zest and juice. Stir in the parsley and serve. |
