Lemon-and-Garlic Roast Pork |

Ingredients:
1 (3 1/4-pound) lean, boneless pork loin roast |
3/4 teaspoon grated lemon rind |
1/2 teaspoon salt |
1/2 teaspoon ground cumin |
1/4 teaspoon pepper |
3 garlic cloves, minced |
1 cup low-salt chicken broth |
Directions:
1. Trim fat from pork. Combine next 5 ingredients in a small bowl; stir well, and rub evenly over pork. 2. Insert a meat thermometer into one end of pork. Place pork in an 11 x 7-inch casserole; add broth to dish. Bake at 400° for 30 minutes. Turn pork over, and bake an additional 35 minutes or until thermometer registers 160°. Discard broth. |
