Great little lemon flavored loaf cake with almonds and raisins. Perfect afternoon pick-me-up with coffee or tea. Ingredients:
11/2 sticks(12tbs.) unsalted butter,softened |
1/2 c. sugar |
grated zest of 1 lemon |
2 extra-large eggs ,beaten |
2c. whole wheat flour |
2tsp. baking powder |
pinch of salt |
juice of 1/2 lemon |
1/2c milk |
3/4c chopped or slivered almonds |
2/3c golden raisins |
Directions:
1. Preheat oven to 350 degrees. Greas a 5 x9 loaf pan and line the bottom with parchment paper. In a bowl,beat the sugar and lemon zest and sugar with wooden spoon till creamy;beat in the eggs Combine the flour,baking powder and salt in a bowl and add to butter mixture;stir in lemon juice and milk.. Mix in the almonds and raisins,reserving 1 Tbs of almonds for the top. Pour batter into prepared pan and sprinkle with reserved nuts. Bake 50 mins or till loaf is golden and a skewer inserted in center comes out clean. Let cool in pan 5 mins,then remove to a wire rack to cool completely. |
