A great tasting bread to add to your table. Or like my kids say, it is a great snack! Ingredients:
1 1/2 stick (12 tablespoons) butter, soften |
1/2 cup sugar |
grated zest of 1 lemon |
2 extra large eggs, beaten |
2 cups whole wheat flour |
2 tsp. baking powder |
pinch of salt |
juice of 1/2 lemon |
1/2 cup milk |
3/4 cup chopped almonds |
2/3 cup golden raisins |
Directions:
1. Preheat oven to 350F. 2. Grease a 5'' x 9'' loaf pan and line the bottom with parchment paper. 3. In a bowl,beat the butter, sugar and lemon zest with a wooden spoon until creamy, beat in eggs. 4. Combine the flour, baking powder and salt in a bowl, and add to butter mixture:stir in lemon juice and milk. 5. Mix in almonds and raisins, reserving 1 Tbsp.almonds for the top. 6. Pour batter into prepared pan and sprinkle with reserved nuts. 7. Bake 50 minutes, or until loaf is golden and a skewer inserted into the center comes out clean. 8. Let cool in pan for 5 minutes, then remove to wire rack to cool completely. |
