ENJOY. Ingredients:
3 t. olive oil or butter |
a pinch of cayenne |
1 onion, finely diced |
2 t. minced fresh ginger |
1 t. yellow curry powder |
2 cloves garlic, finely minced |
1 1/2 cups cooked potatoes |
1/4 cup frozen peas |
2 heaping t. plain yogurt |
1/4 cup minced cilantro |
1/2 tsp. salt |
black pepper to taste |
2 sheets frozen puff pastry |
the sauce |
1/2 cup plain yogurt |
3 t. water |
half a bunch cilantro leaves |
8 mint leaves |
1/2 tsp. vinegar |
1tsp. white sugar |
Directions:
1. Preheat oven to 450 degrees 2. Take out the puff pastry, unfold, and defrost 3. To make the samosas, heat the olive oil in a skillet. Add the cayenne and onion and saute over high heat for 3 minutes. 4. Add the minced ginger and curry powder to the pan. Saute for two minutes. Add the garlic, potatoes, and peas. Saute for 6 minutes. Season with salt and pepper, stir in the yogurt and cilantro and turn off the heat. 5. Gently roll out the puff pastry so that it is a little larger than its original size. Cut each puff pastry sheet into 12 even squares. Place a heaping tsp. of potato filling in the middle of each square and fold diagonally to make a triangle. Press the edges of the triangle together. 6. Place stuffed samosas on a parchment-lined baking sheet and bake at 450 degrees for 18-20 minutes or until golden. 7. The Sauce: 8. Place all ingredients in a blender or food processor, and process until smooth. Serve alongside samosas for dipping. |
