An easy gumbo to make with leftover turkey. Just add a few ingredients and you have it! Ingredients:
at least 4 cups of leftover turkey or more |
1 16 oz. bag of frozen okra |
1 lb. of andouille sausage |
2 chopped onions |
1 chopped bell pepper |
3/4 cup of dry roux |
6 cans of chicken broth |
3 cans of water |
salt, pepper and creole seasoning |
watch the salt after adding the broth |
Directions:
1. Saute onions and bell pepper until wilted 2. Add frozen okra and stir often, for about 5 mins 3. Add sliced andouille sausage and let it cook about 5 mins 4. Add the dry roux along with about a cup of water 5. Mix well and let it simmer for about 5 mins 6. Add the turkey and cans of broth 7. Add the water and bring to a boil 8. Add seasonings to taste 9. Then lower to simmer for about an hour and a half. 10. Serve over rice. |
