Leftover Turkey Enchiladas |

fabulous comfort food, semi healthy-fills the mexican cravings! Ingredients:
2 turkey tenderloins |
10 ounces red enchilada sauce |
10 ounces green enchilada sauce |
15 ounces black beans |
12 small corn tortillas |
1/2 red pepper |
1/2 green pepper |
1/2 red onion |
20 ounces colby-monterey jack cheese |
pam cooking spray |
cumin |
Directions:
1. spray baking pan with pam. 2. bake or grill the turkey london broils and cut turkey into thin slices. 3. cube peppers and onion into small pieces. 4. layer corn tortillas onto pan 5. sprinkle some red enchilada sauce. 6. sprinkle cumin on each layer. 7. layer on turkey, peppers and onions, cheese, green sauce, red sauce and more tortillas ending with cheese on top (like a lasange). 8. bake at 350 degrees for 45 minutes, covered and then uncovered at the end. |
