Leftover Turkey Casserole |

If you have leftover turkey from the holidays, this easy, creamy turkey casserole is absolutely wonderful with some crusty bread! We use colby jack, but just about any cheese, like cheddar or mozzarella or provolone, will work beautifully. Ingredients:
2 cups cooked turkey, cubed |
2 cups frozen spinach |
1 (10 1/2 ounce) can condensed cream of onion soup |
1 cup sour cream |
1/4 cup milk |
1 cup colby jack shredded cheese |
1 cup ritz cracker, crumbed |
salt and pepper, to taste |
Directions:
1. Preheat oven to 375. In a large mixing bowl, combine turkey, spinach, soup, sour cream, milk, salt and pepper. Pour mixture into a 4x10 casserole dish. Sprinkle cheese over casserole and top with cracker crumbs. Bake 35-45 minutes, until crumbs are golden brown. |
