A lazy day today! This was an quick and easy way to use up leftover roast beef from the day before! It gave me 6 generous helpings. I served it with fresh brown bread with herbs. Ingredients:
6 thick slices beef, cubed |
bag of freshly frozen stew mix |
15-20 button mushrooms |
tin of chopped tomatoes |
packet of beef casserole mix |
garlic puree |
1 tablespoon olive oil |
1/2 tablespoon dried oregano |
1/2 tablespoon dried basil |
salt and freshly milled black pepper to raste |
Directions:
1. Sweat the veg in the oil 2. add garlic , tomatoes and casserole mix 3. reduce heat to low 4. add beef and mushrooms and simmer for half an hour 5. taste for seasoning, add salt and pepper if required |
