LEFTOVER OATMEAL MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pride Estate in Irving, Texas in 1990. Ingredients:
1 cup flour |
1 cup brown sugar packed |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 cup vegetable oil |
2 eggs beaten |
1 cup cooked oatmeal |
1 cup raisins |
1 teaspoon vanilla |
Directions:
1. In large bowl combine flour, brown sugar, baking powder and baking soda. 2. In a second large bowl combine vegetable oil, eggs, oatmeal, raisins and vanilla. 3. Add wet ingredients to dry ingredients and stir just enough to moisten dry ingredients. 4. Pour into 12 greased or lined muffin tins then bake at 350 for 20 minutes. |
