Leftover Mashed Potato Cakes

This is a great dish to serve as a side or an appetizer. We love it and it is an awesome way to use up leftover mashed potatoes.
Ingredients:
2 cups mashed potatoes
1 egg white slightly beaten
2 tablespoons chopped white onion
2 tablespoons all purpose flour
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon vegetable oil
Directions:
1. In medium bowl combine potatoes, egg white, onion, flour, salt and pepper.
2. Meanwhile heat oil in a large skillet over medium high heat.
3. When hot put about 2 tablespoons potato mixture for each cake into skillet.
4. Cook until well browned then turn with a spatula and cook other side until brown.
5. Continue making cakes keeping first ones warm.
