This was a fried rice recipe my mother made when I was growing up. Back then we only used rice, egg, and onion. Now that I make it, I add anything leftover in the fridge. It is very versatile. This one uses our leftover Christmas ham. Read more . In the original recipe we had, it called for 1/4 cup soy, to 1/2 cup of water. I think this is way to salty, so I only use half. Ingredients:
4 cups of minute rice, cooked (2 cup uncooked)(can also be cold leftover rice) |
2 eggs, hard cooked scrambled in small pieces |
1/2 med. onion, sauteed |
1/2 jar sliced mushrooms |
4 oz leftover ham, dices or in strips |
1/4 soy sauce |
1/2 water |
oil |
Directions:
1. Pour 2 T. oil into large saute pan or wok. Heat on medium high till ready.. Add rice. Cook till heated through. Add onion, ham and mushrooms. Cook 2 minutes more. Stir in eggs. Mix soy sauce and water together. Gradually pour into rice mixture until it reaches a salt y soy flavor you like. Cook another 2 minutes or so, stirring continuously. Serve piping hot!!! |
