Lefse - Scandinavian Potato Cakes |

These are a traditional potato cake of Scandinavia. Cook them on a dry griddle, no oil. Ingredients:
4 cups mashed potatoes |
2 cups flour |
1/4 cup shortening |
1 tablespoon salt |
Directions:
1. Combine all ingredients and form into 2-inch balls. 2. Roll out like pie crusts and bake on a dry, no oil griddle like you do a pancake on medium heat for 2-3 minutes each. 3. You may wish to dust off any extra flour before cooking so they do not to burn. |
