Leeks With Mushroom Sauce |

leeks with a twist Ingredients:
8 leeks, trimmed and washed |
2 shallots, chopped |
2 tablespoons unsalted butter |
2 garlic cloves, chopped |
1 lb wild mushroom |
1 tablespoon thyme, chopped |
1/2 cup white wine |
1/2 cup heavy cream |
1 tablespoon dijon mustard |
Directions:
1. blanche leeks in salted water-8 minutes. 2. pat dry and split lengthwise. 3. place leeks in buttered ovenproof dish. 4. roast in 375F oven for 30 minutes. 5. melt butter in saute pan. 6. saute garlic and shallots for 3 minutes. 7. add mushrooms and saute for 4 minutes. 8. add thyme and wine 9. simmer. 10. reduce by 1/2. 11. add cream and mustard. 12. simmer and reduce to 1/2. 13. pour sauce over leeks. |
