Ingredients:
10 new potatoes |
3 large leeks (about 1 1/2 pounds), cleaned |
3 cups water |
1/4 pound salt pork |
1 teaspoon maple syrup |
salt to taste |
Directions:
1. Wash potatoes; pare a 1-inch strip around center of each potato. Cut leeks into 2-inch pieces. 2. Combine potatoes, leeks, water, salt pork, and maple syrup in a medium Dutch oven. Bring to a boil; cover. Reduce heat, and simmer 25 minutes or until potatoes and leeks are tender. Add salt to taste. |
