Leek, Sour Cream and Goat's Cheese Egg Thingy |

Simple lovely flavours, quick to make and yummy! Ingredients:
2 big leeks, finely sliced |
30 g butter |
4 eggs, lightly beaten |
200 g sour cream |
150 g fresh goat cheese, sliced |
salt |
fresh ground black pepper |
Directions:
1. Put sliced leeks in medium pan with butter and soften - about 15 minutes. Season well. Lightly beat the eggs and combine with sour cream and season well. Scatter cooked leeks into baking tray and top with egg mixture, then slices of goats cheese. Bake in 180 degree oven until eggs have just set. |
