A traditional winter soup Ingredients:
4 large leek, trimmed and chopped |
16 oz potato, scrubbed and diced |
3 oz green lentils |
1 tablespoon olive oil |
10 g butter |
2 pints water |
10 oz semi-skimmed milk |
4 tablespoons parsley |
2 chicken stock cube |
Directions:
1. Heat a large saucepan and add the oil & butter together with the prepared vegetables. Put on the lid and allow the vegetables to steam gently for about 10 mins 2. Add the stock, bring to a boil and cook for approx. 20 minutes 3. Blend the soup using a hand-held blender 4. Add the lentils and cook for a further 20 minutes 5. Finally, add the milk, parsley, check the seasoning and serve |
