Leek, mushroom, chard soup Ingredients:
6 leek leeks, (bulb and lower leaf-portion) |
2 cup pieces mushrooms |
2 cup, chopped chard, swiss |
3 serving olive oil |
1 tsp ginger root |
16 fl oz organic vegetable broth |
10 cup (8 fl oz) water |
Directions:
1. wash and chop leeks. 2. peel and grate ginger. 3. put leeks and ginger in large pot with 2 T olive oil. Cook until leeks are softening, about 8-10 min. 4. clean and chop mushrooms. 5. wash and chop swiss chard, separating the stalks from the leaves. 6. Add mushrooms to pot. Cook until brown, about 3-4 minutes. 7. Add 2 cups broth and 10 cups water. Bring to a boil. 8. Turn down heat to simmer, and add swiss chard. 9. Cook until chard is wilted, 5-10 minutes. |
