LEEK APPLE YAM GRATIN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woodson Estate in Bedford, Texas in 1990.
Ingredients:
1-1/4 cups heavy whipping cream
2 large leeks sliced
2 tablespoons fresh thyme leaves chopped
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
2 medium yams peeled and thinly sliced
4 medium parsnips peeled and thinly sliced
2 cups grated white cheddar cheese
1 large cooking apple thinly sliced
Directions:
1. Preheat oven to 375 then grease casserole dish.
2. Cook whipping cream, leeks, thyme, salt, pepper and nutmeg in heavy saucepan over low heat.
3. Stir occasionally until mixture begins to simmer then stir in yams and parsnips.
4. Cover and simmer 10 minutes or until vegetables are slightly tender.
5. Layer half vegetable mixture and half of the cheese in casserole then top with apple.
6. Repeat layers of vegetables and cheese then bake uncovered 45 minutes.
7. Let stand 10 minutes before serving.
