This is one of my favourite diabetic soups - but one can serve it to anyone, without them knowing it is a health thing... Ingredients:
3 leeks |
2 ripe tomatoes |
0.5 kilo potatoes |
1.5 litres water |
50 grs low fat butter or spread |
1 marjoram sprig |
salt |
Directions:
1. Slice the leeks and wash well. 2. Skin the tomatoes and chop. 3. Peel and chop the potatoes. 4. Boil them with the water . 5. Add thalf the tomato, the leeks 30 grs of butter. 6. Season and let it cook for 10 minutes. 7. Remove some slices of leeks and set aside. 8. Blend the soup until creamy. 9. Melt the other 20 grs of butter. 10. Add the rest of the tomato and chooped marjoram. 11. Sautée it for a few minutes. 12. Add to the soup, together with the reserved leeks. 13. p.s.: for a bit of extra flavour add 1 tbsp of finely chopped celery to the potatoes. |
