Leek and Potato Soup (Vegan) |

A scottish classic, from the Green Cuisine Cookbook. Ingredients:
4 1/2 cups water |
2 potatoes , peeled and cubed (2 large or 4 medium) |
1 cup onions, diced |
1 garlic clove, minced |
1/2 cup potatoes, diced |
1 leek, chopped |
2 tsp salt |
1/4 tsp rosemary |
1/8 tsp thyme |
1/8 tsp pepper |
Directions:
1. Boil the first 3 ingredients together for 40 minutes. 2. Then blend them in a blender. 3. Steam the diced potatoes and leeks. 4. Add to the soup along with the seasonings and serve. |
