This is a family recipe. Not exactly sure where this one originated from. Its great served with rice, or with crusty bread. Or you can get adventurous, and add a couple of spicy sausages to it, (cut into 1/2 inch chunks), for a hearty winter meal. Ingredients:
1 green pepper, cut into strips |
1 red pepper, cut into strips |
1 orange bell pepper, cut into strips |
1 yellow pepper, cut into strips |
1 large onion, cut into strips |
2 tablespoons canola oil |
2 tablespoons hungarian paprika |
3 tomatoes, skinned &,chunked |
2 eggs, well beaten |
Directions:
1. Fry the onion in oil over med-low heat until clear. 2. Add paprika& mix well. 3. Add peppers& fry 2 or 3 more minutes. 4. Add Tomatoes& cook another minute. 5. Turn heat a little lower, add eggs& stir to coat, until just cooked. |
