Lebanese Turkey Balls

Ingredients:
1/2 cup(s) bulgar wheat
2 tablespoon(s) fresh mint, cilantro, or parsley
1 tablespoon(s) fresh mint, finely chopped
3 clove(s) garlic, minced
1 teaspoon(s) ground coriander
2 teaspoon(s) ground cumin
1/2 teaspoon(s) ground mustard seed
1 1/4 pound(s) ground turkey
1 onion, chopped
1/2 teaspoon(s) pepper
1/2 teaspoon(s) salt
Directions:
1. Bring 1 1/2 cups of water to a boil in a small saucepan. Add bulgar, remove pan from heat, and let bulgar soak for 30 mins.
2. Meanwhile, combine all other ingredients except for the last (2 T of fresh herb) in a large mixing bowl.
3. After soaking, drain the bulgar and add to the ground turkey mixture. Mix in bulgar well.
4. Preheat oven to 400. Form turkey mixture into approx. 36 balls (1 1/2" diameter). Spread out on non-stick baking sheet and bake for 10-12 mins. or until no longer pink. Top with 2 T of fresh herb (mint/cilantro/parsley).
