Light healthy salad. Ingredients:
6 cups flat leaf parsley |
1/2 cup bulgur |
1 onion |
3 medium tomatoes |
1/4 cup lemon juice |
1/4 cup olive oil |
1 teaspoon salt |
Directions:
1. chop parsley, onion and tomato very fine. 2. add bulger, lemon juice, olive oil and salt. 3. toss and serve chilled. 4. pre soak bulgur in hot water to make soft, drain water before mixing into salad. |
