The addition of browned pasta to rice seems to transform it into a true side dish. Our family rarely would fix plain white rice. If I post a recipe to be served over rice. This is the rice I am talking about. Read more Ingredients:
1 cup uncooked long grain rice |
2 tbls clarified butter |
1/4 cup small pasta (i use orzo but you could used any thin pasta such as vermicelli broken up into small pieces. |
2 1/2 cups (hot) water. |
salt to taste |
Directions:
1. Wash Rice until water runs clear. (Optional) Drain thoroughly. 2. Saute' pasta in butter until medium - dark brown but not burnt. Add rice and salt. Stir constantly until rice is well coated with butter and begins to turn translucent. 3. Add hot water, bring to a boil, and boil for 2 mins. Reduce heat to low, cover simmer 15 mins. Remove from heat, leave covered an additional 5 mins. 4. To serve as a stand alone side dish. Top with Sauteed pine nuts or almonds in brown butter. 5. Variation. To serve with chicken, add a pinch of saffron or 2-3 anatto seeds when frying the pasta to add a delicate orangish yellow color. |
