Lebanese Shrimp Skewer

This is a very simple but very delicious appetizer. My friends and I were asked to create a Mediterranean menu for a party so we touched all different sides with each dish. Remember there is nothing scary about cooking, it's just cooking.
Ingredients:
40 shrimp, large, raw, peeled and de-veined, tails removed
1 t dill, fresh, minced
1 t ground yellow mustard
1 t extra virgin olive oil, good quality
1 small shallot
1 t kosher salt
juice of 1 lemon, with a quarter of the zest
Directions:
1. Wisk all ingredients together.
2. Skewer the shrimp one per skewer, as straight as the shrimp can be.
3. Marinate shrimp for up to 1 hour.
4. Grill shrimp on medium heat, approximately 3-5 minutes depending on grill.
5. Enjoy.
