This recipe comes from the small village of Baakline in the Mountains of Lebanon. Very simple & fresh flavors Ingredients:
1/2 head of cabbage shredded (can use a combination of red & green) |
1 cup chopped tomato |
1/2 cup slivered onion |
1/2 cup chopped parsley |
1/2 cup chopped scallions |
1/2 cup chopped fresh mint |
12 greek olives pitted and quartered |
6 tbls olive oil |
3 tbls lemon juice |
1 - 4 cloves garlic crushed |
1 tbl crushed dried mint |
1 tsp salt or to taste |
1 tsp fresh cracked pepper |
Directions:
1. Crush garlic into a paste with salt. Add Lemon and Mint. Mix well. Combine in jar with oil and shake. 2. Toss vegetables together and chill. Dress with Lemon, oil and garlic. Top with Olives and Mint before serving. Note: If doing ahead, do not add tomatoes until ready to serve. |
