Leanne's Red Beans and Rice

One of our favorite meals & it makes the house smell so good!
Ingredients:
1 lb smoked sausage, cut into 1/4-inch thick slices
1 onion, chopped
3 garlic cloves, minced
1 bell pepper, chopped
2 (14 ounce) cans red beans, drained
1 cup tomato, chopped
1/2 teaspoon thyme
1/4 teaspoon cayenne pepper (optional)
salt and pepper, to taste
3 cups brown rice, cooked
Directions:
1. Heat skillet over med-low, cook sliced sausage for about 2 minutes.
2. Add onion, garlic, bell pepper & saute till veggies are tender.
3. Add beans & tomatoes with their juice, sean with thyme, cayenne, salt, & pepper.
4. Serve over rice.
