Leanne's Red Beans and Rice |

One of our favorite meals & it makes the house smell so good! Ingredients:
1 lb smoked sausage, cut into 1/4-inch thick slices |
1 onion, chopped |
3 garlic cloves, minced |
1 bell pepper, chopped |
2 (14 ounce) cans red beans, drained |
1 cup tomato, chopped |
1/2 teaspoon thyme |
1/4 teaspoon cayenne pepper (optional) |
salt and pepper, to taste |
3 cups brown rice, cooked |
Directions:
1. Heat skillet over med-low, cook sliced sausage for about 2 minutes. 2. Add onion, garlic, bell pepper & saute till veggies are tender. 3. Add beans & tomatoes with their juice, sean with thyme, cayenne, salt, & pepper. 4. Serve over rice. |
