Great meal! High in protein and fiber. Low in fat. Ingredients:
2 c yellow onion |
2 tbsp garlic, minced |
1 pound turkey, ground |
2 c chicken broth |
31 oz. great northern beans (2 cans) |
1 tbsp oregano |
1 tbsp chili powder |
1 tbsp cumin |
1 tsp coriander |
1 dash pepper |
Directions:
1. Coat pan with cooking spray. 2. Add onions and garlic and saute until they begin to soften. 3. Add ground turkey, stirring occasionally until cooked. 4. Add chicken broth, then stir in spices. 5. Add drained and rinsed white beans. 6. Heat to a boil and then reduce heat and simmer covered for at least 20 minutes. |
