While most meatloaf recipes use ketchup this one does not and smells and looks amazing! Lower sodium than using ground beef! Make this even lower sodium by using reduced sodium saltines, low fat cheddar cheese and low sodium worcestershire sauce!! Ingredients:
2 lbs lean ground turkey, thawed |
1 medium green pepper, finely chopped |
1 medium tomato, finely chopped |
6 fresh basil leaves, finely chopped |
1/2 cup fresh spinach leaves, finely chopped |
1 garlic clove, minced |
1/2 teaspoon onion powder |
1 tablespoon worcestershire sauce |
1 egg |
15 -17 saltine crackers, crushed |
1 cup cheddar cheese, finely shredded |
Directions:
1. Preheat oven 400. 2. Combine all ingredients except cheddar cheese in large bowl and mix well. 3. Separate half of mixture and smooth out in loaf pan. Sprinkle 1 cup of the cheddar cheese and top with remaining part of meat mixture and smooth. 4. Bake for 1 1/2 hour. If desired sprinkle 1/2 cup of cheddar cheese over top of loaf for the last 10-15 minutes. |
