Leaky Creamy Chicken Dump |

I renamed this. I think this might have been a Rachel Ray recipe, but this is a favorite amongst anyone I've ever cooked for... here's how I make it. Ingredients:
2 tablespoons extra virgin olive oil |
3 leeks, chopped |
5 celery ribs (use the inner stalks with the leaves) |
2 bay leaves |
1 lb chicken chunks (breast is best) |
2 liters chicken broth |
2 cups whipping cream |
2 lbs gnocchi (two packages, i think they're a pound each ) |
parsley and paprika |
salt and pepper |
Directions:
1. -Heat EVOO over min in pot, add leaks, celery, bay leaves, s&p. 2. -Cook approximately 5 mins, till tender. 3. -Add broth, boil and lower to simmer. 4. -Stir in whipping cream. 5. -Add chicken chunks and gnocchi. 6. -Cook until chicken is done, maybe 10 mins. 7. -Remove bay leaves. 8. -Stir in parsley and paprika. |
