Leahs Honey-mustard Grilled Chicken Over Salad |

For lover of chickens who may be on diets, here's a quick easy one I created last week when I was in a jam while gaining weight while looking up recipes here! LOL Ingredients:
1 boneless chicken thigh per person or 1/4 boneless chicken breast. |
salad greens enough per person using your favorite lettuces - i chose bib, red leaf, romaine and baby spinach. |
croutons (optional) |
2 tablespoons good dijon mustard |
1 tablespoon honey |
1 tablespoon light sodium soy |
2 tablespoons of light honey dijon dressing |
sesame seeds (optional) |
sunflower seeds (optional) |
salt & pepper |
salad dressing for your salad (your choice) |
****equipment needed |
inside grill pan, hungry people, bowl |
Directions:
1. In bowl, place pre-made light honey dijon dressing (I use wishbone's too good for you , soy, dijon mustard, honey. stir till well combined. 2. Add rinsed and patted dried chicken thighs into bowl and let marinate 15 minutes, poking them with a fork to allow juices into chicken and turning them every so often to ensure each piece has been covered with marinade. 3. Heat up inside grill pan on top of stove burner(s) 4. Prepare salad in individual plates or in bowl to serve your hungry peeps. 5. Take chicken out of bowl, let marinade drip off and place onto grill pan. 6. After 6 minutes, turn chicken on the diagonal so that pretty grill marks will appear. 7. Turn over chicken after another three or so minutes to cook the other side of the chicken. 8. Once done, take chicken off and let rest for 5 minutes before placing chicken on top of salad. 9. Sprinkle sesame seeds and optional croutons on top of grilled chicken and call those peeps to the table. 10. Enjoy! |
