A great fireside warmer. Ingredients:
1/4 lb salt pork |
3/4 cup celery, diced |
1 med green pepper, diced |
6 medium potatoes, peeled and diced |
2 cups water |
2 cans tomato juice (1 pint, 2 oz) |
1 can tomatoes |
1 tb dried onion |
1 tb dried parsley |
4 ea 8 oz cans minced clams, with juice |
salt and pepper to taste |
Directions:
1. Cut salt pork into thin pieces and cook slowly in skillet until lightly browned. Add celery and green pepper and saute until tender. Transfer skillet mixture to a large kettle. Add potatoes and waqter. Cover and simmer until potatoes are tender. Add tomato juice, tomatoes and onion. Cook gently about 10 minutes, stirring occasionally to blend flavors.
