Pumpkin muffins the lazy way! I swapped out some white sugar for brown sugar because I ran out of the white stuff, and it worked out very nicely. Likewise, I used apple (yes, apple) pie spice and ground cloves in place of the more standard pumpkin-pie-spice or a custom blend, because A) I'm lazy and B) that's what I had handy :) Otherwise, the only adaptation is that didn't read the directions when I made my muffins - just dumped all the ingredients in a bowl and ran with it. It worked out well, so I've based my directions on that method. Ingredients:
1 1/2 cups all-purpose flour |
1 tsp baking powder |
1 1/4 cup pumpkin |
1/3 cup olive oil |
2 large eggs |
1 1/2 tsp apple pie spice |
1/2 tsp ground cloves |
1 1/4 cups sugar |
1/2 tsp baking soda |
1/2 tsp salt |
Directions:
1. Preheat oven to 350 degrees. 2. Line muffin cups with paper liners or spray muffin cups or loaf pans with baking release spray. 3. Toss all the ingredients in a large bowl. 4. Mix until smooth. 5. If making muffins, fill each up about 3/4 of the way. If making a loaf or loaves, fill the loaf pans nearly to the rim. 6. Bake muffins for about 20 minutes and loaves for about 30 - 40 minutes (depending on loaf size), or until a fork or toothpick inserted in the center of the bread comes out clean. |
