Lazy Lemon Chicken & Rice

This recipe is a quick and easy one dish meal. Perfect for those last minute what's for dinner moments.
Ingredients:
1/2 cup italian dressing
1 lb boneless skinless chicken breast, cut into strips
1 cup chicken broth
1 cup broccoli floret
1 red pepper, cut into strips
1 cup carrot, thinly sliced
2 cups minute brown rice, uncooked
1 tablespoon lemon pepper seasoning
1/4 cup lemon juice
2 tablespoons parmesan cheese, grated
Directions:
1. Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 1 minute.
2. Add broth, broccoli, red pepper and carrots. Bring to boil.
3. Stir in rice and lemon juice. Return to boil. Reduce heat to low; cover. Simmer 10 minutes. Remove from heat. Let stand 5 minutes. Stir in lemon pepper seasoning; sprinkle with parmesan just before serving.
