Being a new mom, my meals during the day have to be quick and nutritious. Here's a easy salad that comes together very quickly. Now I just have to find the time to eat it!! Ingredients:
2 red peppers |
2 yellow peppers |
1 small red onion |
1/2 cup feta cheese, crumbled |
extra virgin olive oil |
balsamic vinegar |
1 tbsp oregano |
Directions:
1. Chop all veggies into larger bite size pieces, place in bowl 2. Add feta 3. Pour equal parts vinegar and oil to taste 4. Mix in oregano 5. Enjoy!! |
