I just found this recipe in a Quick Cooking cookbook. It was sent in by Lillian Marcotte. Looks delicious! Ingredients:
1/4 cup butter or 1/4 cup margarine, softened |
2/3 cup sugar |
1 egg |
1 teaspoon vanilla extract |
1 1/2 cups flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
3/4 cup milk |
1 1/2 cups flaked coconut |
1/2 cup packed brown sugar |
5 tablespoons whipping cream |
1 1/2 teaspoons vanilla extract |
Directions:
1. Cream butter and sugar. 2. Beat in egg and vanilla. 3. Combine flour, baking powder, and salt in a separate bowl; add to creamed mixture alternately with milk. 4. Pour into a greased 8-inch square baking pan, Bake at 350°F for 30 minutes or until toothpick inserted in center comes out clean. 5. Meanwhile, combine all topping ingredients. 6. Spread over warm cake. 7. Broil 3-5 inches from heat for 3-5 minutes or until golden brown. |
