Layered Zucchini & Yellow Squash Casserole |

A great veggie casserole when vegetables are at their peak and you just can't resist all the great produce at the farmers' market. Ingredients:
2 medium yellow squash, thinly sliced |
2 medium zucchini, thinly sliced |
1 medium onion, thinly sliced |
1/2 large green bell pepper, sliced in strips |
1 cup fresh mushrooms, sliced |
1 large tomato, sliced |
salt and pepper, to taste |
2 tablespoons butter |
2 tablespoons grated parmesan cheese |
Directions:
1. Lightly grease an 8 inch square baking pan (or spray with Pam). 2. Layer the vegetables in the order listed, sprinkling each layer with salt and pepper as desired. 3. Dot the top with butter, and sprinkle with Parmesan cheese. 4. Bake at 350F for 35 minutes or until crisp-tender. |
