I got this recipe from my mom....and I have no idea where she got it. But it is delicious with tortilla chips. I have this at most of my parties. People love it!! Ingredients:
16 ounces refried beans |
8 ounces sour cream |
12 ounces mayonnaise |
1 1/4 ounces taco seasoning |
1 medium onion |
3 ounces canned diced green chiles |
2 cups cheddar cheese |
1 large red ripe tomato |
Directions:
1. in a square 8 X 8 dish layer ingredients as follows. 2. 1st layer: spread the entire can of refried beans over the bottom of the 8X8 dish. 3. 2nd layer: mix 1 cup of sour cream, 1 and a half cups of mayonnaise, and the envelope of taco seasoning until the taco seasoning is evenly blended. spread evenly over the bean layer. 4. 3rd layer: mince the medium onion and sprinkle it over the 2nd layer. 5. 4th layer: sprinkle as much of the canned green chiles as you like over the onions. the more you put on the spicier the dip will be. 6. 5th layer: spread the 2 cups of shredded cheddar cheese (you don't have to use shredded cheddar cheese - you can also use a shredded mexican cheese blend, or Monterey jack blend). 7. 6th layer: dice the tomatoes and place them on top of the cheese. ( I deseed the tomatoes before I dice them. I don't like the goopy insides messing up the prettiness of the dish.). 8. Put this dish in the refrigerator for about an hour at least - then serve with your favorite tortilla chips. 9. Prep time does not include the hour chill time. |
