Layered Sweet Potato And Cranberry |

If you are looking for a new side dish for the holidays, check out this cranberry and sweet potato casserole. Ingredients:
4 large sweet poatoes ( about 3 1/2 pounds) |
1/2 cup firmly packed brown sugar |
1 tbs butter |
1 cup fresh cranberries, divided |
1/2 cup orange juice |
1/2 cup chopped walnuts |
2 tbs butter, melted |
1 tbs brown sugar |
1/2 tsp ground cinnamon |
Directions:
1. Cook potatoes in boiling water to cover 40 to 45 minutes or until tender 2. Drain; let cool slightly 3. Peel and cut into 1/4 inch slices. 4. Arrange half of potato slices in a greased 13 x 9 x 2 inch baking dish. 5. Sprinkle with 1/4 cup cranberries. 6. Repeat layers. 7. Pour orange juice over top. 8. Cover bake 350 degrees for 45 minutes 9. Combiine walnuts, butter, sugar and cinnamon; stir well 10. Sprinkle mixture over potato mixture. 11. Bake uncovered 10 additional minutes |
